I’m so excited! Our CSA starts today. CSA stands for Community Supported Agriculture. Essentially, we buy “stock” in a farm and they provide up “dividends” of produce weekly. Our CSA a partnership between the shop, A Thyme For Everything and Fahrmeier Farms located in Lexington, Missouri. We’ve partnered now for 4 seasons. The produce is fabulous! In honor of our CSA and that we have fresh spinach in it today, I will share a recipe for my favorite salad and vinaigrette. Enjoy!
Raspberry Champagne Vinaigrette
2 T. Shallots, minced
1 t. Dijon Mustard
2 T. Raspberry Champagne Vinegar (available at the shop)
6 T. Oil
*Whisk together vinegar, mustard and shallot. Whisk in oil.
Makes ½ cup.
I prefer to make a salad of mixed greens, romaine and spinach. Toss together with feta crumbles, heirloom tomatoes, almond slivers, sunflower seeds, and craisins. Oh my! Delish!
