Sunday afternoon, I and two other friends hosted a Bridal Shower for a dear friend. Saturday ended up being crazy busy, so the “from scratch” cupcakes I was going to make, didn’t happen. Sunday morning arrived and panic set in! What am I going to do? I had a confetti cake mix from grocery store, so I decided to try a Cake Mix Doctor recipe. The Cake Mix Doctor Cookbook was written by Anne Byrn in 1999 and is still relevant to todays baking mixes.
I decided to just do the Basic Butter Cake recipe, page 402. I made cupcakes out of it instead of a layer cake. I was a little freaked out when I checked them partway through baking, they just weren’t rising. So, what to do? Of course I had to try one to make sure it would be edible for my guests. It was FABULOUS! They don’t rise as much as regular cupcakes, but the buttery rich flavor…oh my! They were just like from-scratch-baked-cupcakes! The recipe is pretty basic. You just put the mix into a medium bowl and through away the box instructions. Add 1 cup whole milk, 1 stick better (melted), 3 large eggs and 2 teaspoons vanilla extract. Mix and scrape down sides of bowl, then beat on medium for 2 minutes. The finished product is so delicious!
Icing? Well, I cheated and just used Duncan Hines Whipped Icing. I’m an icing freak! My favorite cake, besides Lorin Fahrmeier’s Famous Carrot Cake, is BIRTHDAY CAKE! I could literally eat Birthday Cake everyday! Ok, my butt would look like…well, let’s not go there. So after the initial taste test, I decided I had to taste one with the icing on it, again to make sure it was edible. You see the lengths I go to for my peeps? Even better, because it had icing on it! Everything is better with icing! I then added adorable hot pink sprinkles. (If you knew my friend Tina, you would understand why they were hot pink!)
So, after I got the last batch into the oven, I noticed there was enough batter left for one more cupcake. I put it into a cupcake liner and because I didn’t want to dirty another pan (I had also made mini chocolate cupcakes), I just shoved it best I could into a mini muffin tin. This result wasn’t pretty when it came out of the oven. What to do? Oh my, the dilema! Should I throw it away? HECK NO! But I couldn’t serve it, it was just to hideous looking! Oh my….what to do? I could see if Don (husband) wanted it. No, it was just too ugly! I couldn’t even get icing on it, it was so misshappen. I did the only thing I could, EAT IT! But the icing, what to do? The only thing possible, grab a fork, take a bite of frosting, then a bite of cupcake. More frosting, more cupcake. Deed was done! Yes I ate 3 cupcakes in 2 hours! Oh my! Now you know why I’m always on a diet!
